Five Ingredient Granola
Granola is one of my favorite breakfast foods but it can be loaded with fat and calories. Here is recipe that I adapted from my mom that is low in fat and sugar but high in nutrition. I love this recipe because the fiber in the oats and the protein in the quinoa help keep me full until lunch time. I eat about a half of a cup with rice or almond milk (and fresh fruit if it available) every morning. So good!
Ingredients
- 6 cups Old Fashioned Oats (this can vary a little and I use gluten free oats)
- 1 Tbsp Coconut Oil (or other heart healthy oil)
- 1/2 cup honey
- 1/2 cup maple syrup
- Cinnamon
Optional
- nuts, dried fruit, coconut
Preheat oven to 325 degrees. In a large bowl, add ingredients (except nuts and fruit) and mix until oats are well coated. Pour onto a large cookie sheet and spread well to create a thin, even layer. Cook for 10 minutes, take out and mix. This will ensure that the mixture doesn't burn and is evenly cooked. Cook for another 10 minutes, then mix. Keep doing this until oats are a light brown - about 30 to 40 minutes. Remove from heat and let cool. Add nuts and dried fruit if desired. Store in a resealable container. Enjoy!
