Cheesy Egg and Squash Scramble

So it is probably obvious but I use squash a lot to add nutrients to my boys' diets.  Breakfast is no exception.  Squash is so great because it blends in easily with most foods and has a mild taste.  They are high in Vitamin C, B2 and potassium.  They also have a high water content making them not only nutritious but filling.  

For the eggs, I mix a 1 tablespoon for every two eggs.


It helps to mix it together over heat.  The squash breaks down better once it is hot.  The yellow of the squash blends nicely with the yellow color of the eggs.  Even my husband can't tell I have add squash to his favorite breakfast food!


Add cheese - I always opt for low fat - and favorite seasoning.  Enjoy!

Sneaky Pasta (or Pizza) Sauce

Pasta sauce is both a great medium for hiding vegetables and a good source of vegetables on it's own.  Any store bought sauce will work but here is the one I use.  I like this one because it has a lot of vegetables already added and is a great combination of tangy, sweet.  This recipe can be used for either pasta or homemade pizza.


 There are six different vegetables in this recipe: tomatoes, mushrooms, onion, red pepper, green pepper are in the sauce already and I add broccoli and butternut squash.  For my boys I take some of the sauce and blend it with broccoli and pureed butternut squash (about 1 tbsp).  Broccoli is one of the great vegetables.  It is part of the cabbage family and is high in Vitamin C, fiber, and anti cancer compounds as well as other important micro nutrients. 


Butternut squash is also high in fiber and Vitamin C as well as magnesium and potassium.   The butternut squash is so good in pasta sauce, it adds sweetness and creaminess.  I started adding butternut squash to pasta sauce after trying a butternut squash sauce at a farmer's market.  Ethan was with me and couldn't get enough of it.  I also add some Parmesan cheese because is very flavorful and hides the broccoli taste. 


The sauce turns a little orange but my guys don't seem to mind.  If it gets too orange, add more red sauce until you get the right color for you.  Any leftover sauce can be put in a freezer bag and frozen until the next time you have pasta.  Once in the bowl, you can also sprinkle with some cheese to hide color.


My husband and I don't need it pureed so I just cook the broccoli, add sauce and butternut squash and serve over pasta.  So simple!  Enjoy!
